Paleo Pumpkin Gingerbread Cake

I get asked a lot about what I eat during the holidays and how I stay Paleo. Well this recipe I just found and tried out is one of the ways I do. I LOVE pumpkin bread! Stefani makes the best pumpkin muffins, rolls, bread… Anything pumpkin, she is queen of! Wanting to keep eating pumpkin stuff whilst staying paleo this recipe delivered!!! Here’s how to make it…

Ingredients:

1 cup pumpkin puree (NOT pumpkin pie filling)
1 cup Almond Butter
1/4 cup honey
2 large eggs
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon vanilla extract
1 teaspoon cinnamon
1 teaspoon ground ginger
1/4 teaspoon nutmeg
1/4 teaspoon cloves
1/4 teaspoon cardamom
1/2 teaspoon lemon zest


Mix everything together in a mixing bowl, then put it all into an 8×8 backing pan. Cook for @30 minutes at 350.

It is awesome! I think I’m gonna find a paleo ice cream to pair it with next time to make it even better!!!
